Apple Pie

Ingredients

Filling:

2 large Granny Smith apples

1/3 cup whole wheat flour

1/2 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon allspice

1/2 cup raw sugar

Topping:

1 cup whole wheat flour

1/2 cup raw sugar

1 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

Preparation

Preheat oven to 350 degrees.

Quarter apples, slice each quarter in through the middle (like sandwich bread) and then dice length and width-wise, to make 1/2 inch chunks.

Mix all the topping ingredients, minus the eggs, in a medium bowl.

Mix all the filling ingredients, minus the apples, in a large mixing bowl.

Mix apples into the large bowl, stirring until all the filling sticks to the apple chunks.

Pour the apple mixture into your pie crust. It will be rounded at first, but will flatten while baking.

Whisk eggs together, then pour into medium bowl. Initially, you can mix this with a fork, but to mix the eggs and dry ingredients thoroughly, you can either use a mixer, or your hands. You will be getting your hands into the mixture in a minute anyway, so may want to skip the mixer.

Take small bits of the topping mixture and press onto the top of the apples, until the whole pie is covered. (Any bits that aren’t covered won’t burn, but an evenly spaced topping will look nicer.)

Bake at 350 degrees for 45 minutes.
