Apple Spice Muffins

Ingredients

1 1/2 cups whole wheat flour

2/3 cup sugar

1/2 teaspoon salt

3 teaspoons baking powder

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon allspice

3 heaping tablespoons plain whole yogurt

2 eggs

1/2 cup milk

1 large Granny Smith apple, finely chopped

Preparation

Preheat oven to 400 degrees.

Quarter apples, slice each quarter in through the middle (like sandwich bread) and then dice length and width-wise, to make 1/2 inch chunks.

Mix all other ingredients in a large mixing bowl.

Blend thoroughly with a hand-mixer.

Use an ice-cream scooper to pour perfect portions into muffin tin.

Bake at 400 degrees for 20-25 minutes.
