Berry Muffins

This versatile recipe works for blueberry muffins, strawberry muffins, boysenberry muffins or mixed blackberry and raspberry muffins.


1 1/2 cups whole wheat flour

2/3 cup sugar

1/2 teaspoon salt

3 teaspoons baking powder

1 teaspoon cinnamon

3 heaping tablespoons plain whole yogurt

2 eggs

1/2 cup whole milk

1 pint fresh berries (whole, unless strawberries, then diced)


Preheat oven to 400 degrees.

Add all ingredients except berries to a large mixing bowl.

Blend thoroughly with a hand mixer.

Use an ice-cream scooper to pour perfect portions into muffin tin.

Bake at 400 degrees for 20-25 minutes.
