Southern Green Bean Rice

Serves 2

Total time: 1 hour

Active cooking time: 20 minutes

Ingredients:

2/3 cup brown rice

2 cups vegetable stock

1 1/2 cups shredded Swiss cheese

1/4 cup milk

1 cup chopped green beans

1/2 cup chopped black olives

Spices: salt, pepper, garlic powder, oregano, cayenne pepper, paprika

Boil vegetable stock.

Chop ends off of green beans and chop in 1 inch pieces.

Return to lowest heat and add rice and green beans.

Let rice cook for 55 minutes. If vegetable stock evaporates too quickly, add a bit of water until time is done and rice is fully cooked.

When rice is fully cooked, add cheese and milk and stir until well blended.

Add spices:

1/4 teaspoon garlic

1/4 teaspoon oregano

1/4 teaspoon cayenne pepper

2 dashes paprika

Add olives and serve!
